Our selection facilities have proprietary cleaning equipment that is designed to be as gentle as possible on the product, reducing the overall rework for our sausage producers. Certain select and tender material is best when cleaned by hand which is a forte of our selection facilities.

Sheep casings has superior frying capabilities whether boiled, fried, or grilled. Every region has its own specific traditional sausages like:
Wieners, Frankfurters, Nürnberger, Bratwurst, Knackwurst, Debreziner, Bratwurst, Bockwurst, Merguez and Chipolata.

Light in color, mid to narrow caliber grading, tender bite
Australian Material
Snow white in color, accurate calibration, mid caliber sizing, excellent bite quality, Halal certified (specific material only, must be requested at the time of ordering).
New Zealand Material
Snow white in color, durable on automated equipment, wide caliber in nature, best bite characteristic, produces highest quantities of A quality material.
Halal Certified Casing
DCW cleans and selects high quality Halal Certified sheep and lamb casings. DCW produces these products so their end users can feel confident that the merchandise has been certified.
Cleaning
The majority of the material DCW procures is packed and shipped to our selection facility cleaned and salted. The cleanliness and quality of the casings produced by our selection plants surpasses our competition as a result of our proprietary cleaning processes. Not only will you receive the cleanest most wholesome casing available, we also insure the casings do not get damaged during the process. The result is a casing that performs better on your stuffing equipment and in your smokehouse.
Tubing
Tubing is a process in which each finished piece of casing is reeled onto a plastic tube. Tubed casings allow a sausage manufacture to quickly place the casing on the stuffing horn without having to pre-tube the product or ravel on by hand. Tubed casings make longer strand sheep casings easier to manage in the factory and help our customers avoid tangling while soaking or stuffing. Tubing is a process used by the majority of medium to large end users to create more speed and efficiency on the stuffing line.
Pre-Flushed
Each hank of casings has a brine solution run through them and they are place in a seal plastic bag floating in brine solution. Preflushed casings allow the customer to begin stuffing product with little to no soaking time avoiding pre preparation procedures.
Selection: Sizing and Lengths
Long strands: Excellent raw material and advanced selection processes result in large quantities of long strand products. This merchandise is idea high output demand producers with portion control stuffing equipment.
Accurate sizing: Many of our specifications focus on accurate grading for a more uniform packaging look and weight control without portion control equipment. Through strict selection standards and consistent raw material DCW can offer specifications that are the tightest in the industry.
